Easy Roasted Butternut Squash Recipe

Fall is here and with it all the amazing squashes!! I found this butternut squash in a farm market and had to buy it! the first of the season. I love the taste of butternut squash so much that I cook it in the simplest way not too mess up with it!


  • One butternut Squash
  • Butter
  • Mozzarella cheese
  • Parmesan Cheese
  • PAM non stick cooking spray

Pre-heat oven at 350F.Wash the butternut squash and cut it in two (be careful doing this!).

Scoop all the seeds out with a spoon a keep them (you can save them to plant them in the garden next year or you can cook them - click here for a nice recipe).

Spray PAM on a oven proof dish and put the butternut squash halves on it.

Spread butter over the squash.

Cut some mozzarella cheese and place over he squash. Sprinkle the Parmesan cheese on the squash.

Put it in the oven for about 35-45 minutes or until fully cooked and the cheese is melted.
