Dukan Diet Easy Chicken Soup Recipe

Once you get into the Dukan diet's cruise phase you are allowed vegetables and it makes life soooo much easier. I have been cooking lots of my regular recipes and also created new ones like this one. I love chicken soup and I am in love with this one. I think there is something in there, because every time I eat it I lose a lot of weight that day! I am sure it is me, but it can also be the cabbage!

Ingredients:
(Makes about 8 servings - feel free to add more or less of any ingredient according to your taste)

  • 3 cups finely cut Cabbage (Julienne style)
  • 1 medium onion - chopped
  • 2 or 3 big tomatoes - chopped
  • 1 pepper - chopped
  • 2 chicken breasts - no skin
  • Chicken bouillon
  • Cumin and turmeric to taste
  • Fresh Coriander (as much as you like)
  • Juice of one lime

Put about 4 to 5 cups of water to boil, add the chicken breasts. Chopped all vegetables as small as you like them and add them to the water. Let it build for about 5 minutes.

Take the chicken out and cut it is small pieces or shred it. Return it to the  pot. Season the soup with 1 or 2 tbsp of chicken bouillon, a little cumin and pinch of turmeric. Let it cook for about 10 to 15 minutes or until the cabbage is tender. Add the chopped coriander and the juice of the lemon. Turn the soup off. You are done!!!

I make a lot of it, and freeze it in individual portions. I take them to my work on vegetable-protein days. So easy!
