My little princess party - Princess Cake





This little princess was going to a ball with a bunch of flowers, but her carriage broke... fortunately for her, a cute little gnome was walking by and help her fix her ride!!!

This was the cake for my baby's 4th birthday. She wanted a princess with a long pink dress. The cake is covered in buttercream to resemble grass The figures and flowers are made with gum paste and the carriage and birds with pastillaje.

I do not know if you can find pastillaje ready available in the US so I use my own recipe - it is very simple to make and the good news is that you can make a lot of things in advanced as it keeps forever. I made a whole bunch of birds in different sizes, a carriage and a few other thins at one go.

Here is the recipe:

Ingredients:

3 tbs water
1 tbs powder gelatin (non flavored) or Knox
1 tbs glucose
2 tbs of lemon juice (you can also use vinegar)
1 pound of icing sugar
Instructions

1. Pour the gelatin in the water for about 5 minutes, add the glucose and put under low heat until it all melts together

2. Take half the sugar and pour the above mixture and the lemon juice

3. Knead very well, it will be tough at the beginning but keep at it, the heat fro your hand will help you melt the mix. At this point you can keep the mix covered on cling film (plastic wrap) and keep it covered on a zip lock or airtight container. you can keep on the fridge for a week or freeze for longer
4. When you are ready to work, add the rest of the sugar and knead again until it is pliable - sort of like play doh

You need to work relatively fast as pastillage dries out - keep the pastillage you are not using completely covered in plastic wrap.
