My auntie Gladys' Apples and Pineapples salad is by far one of my favorite dishes from the Christmas table. I have been enjoying its delicious creamy sweet and tart flavors for as long as I remember. Every year I say that I should make the salad more often but I never do so it truly is a special occasion treat!!
Ingredients: (8-10 servings)
4 green apples
2 cans of pineapple rings in their own juice (not syrup)
1 pack 8oz of Philadelphia cream cheese
1 can of Nestle medium cream
1 tbsp of lime juice
Preparation:
Open the pineapple juice and separate the rings and the juice (keep the juice). In a big pot or in you kitchen assistant, beat the cream cheese and the cream until they are soft. Pour some of the pineapple juice a little at a time until the sauce resembles the consistency of mayonnaise.
Peel, core and cut your apples into small squares. Add them to the sauce immediately or cover them with the lime juice so they do not go brown. Cut the pineapple rings more or less the same size that you cut the apples and add to the sauce too.
Mix well. Put on a container, cover it and put on the fridge for at least 2 hours or overnight. To serve, mix well and serve cold. Enjoy!!!
