So today, I felt like doing the chicken sans the tamales. And am I glad I did! it turned out so good! Here is what I did.
Ingredients:
- 2 Chicken breasts
- 6 medium size tomatillos
- 1 Serrano pepper (more if you like it hotter)
- 3 garlic cloves
- 2 tbsp olive oil
- salt and pepper to taste
Preparation:
Peel and wash the tomatillos until they are not sticky anymore. Cut the tomatillos into four pieces, keep aside.
Wash the Serrano pepper and cut it in half, remove seeds if you want a milder sauce (leave them for more spice), keep aside.
Peel the garlic cloves. Put the garlic, tomatillos and pepper in a blender (I used my Ninja blender), and blend until very smooth. Keep sauce.
Heat the olive oil in a pan. Season your chicken breasts with salt and pepper and pan fry them for a few minutes on each side until they are nice and brown.
Add the tomatillo sauce, season with more salt and pepper to taste. Close the pan and cook at medium heat for about 10 minutes until the chicken is done and the sauce darkens a little.
Your chicken is done - and the sauce is oh so yummy!!! You can serve this chicken with rice, or if you are on the Dukan Diet - just eat it like that, on its own.
Tip: Make sure you blend your sauce very well. I use my Ninja blender because it has 3 blades and I feel it does a great job of not leaving any lumps there. Ninja's are so cool. Check them out:
